This wok-fried Thai omelette is a great way to start the day. The ingredients can be tailored to your needs or you can use whatever veggies you have in the refrigerator. We like to have this with rice and some chili paste or sometimes by itself, especially if there are tomatoes in it.

Ingredients

Serves 3-4 people;
Eggs - 3 eggs

Onions - 1/4 of a medium onion (we used leeks here)

We love to cook this with cherry tomatoes and bell peppers for extra flavor. *You can substitute the oil for whatever type you prefer.
This is also great with scallops, prawns, oysters, or any type of meat.
