This wok-fried Thai omelette is a great way to start the day. The ingredients can be tailored to your needs or you can use whatever veggies you have in the refrigerator. We like to have this with rice and some chili paste or sometimes by itself, especially if there are tomatoes in it.
Serves 3-4 people;
Eggs - 3 eggs
Fish Sauce - 1.5 tablespoons
Onions - 1/4 of a medium onion (we used leeks here)
Minced Sausage (this is shown with Pork mince)
Vegetable Cooking Oil* - 2 tablespoons
We love to cook this with cherry tomatoes and bell peppers for extra flavor. *You can substitute the oil for whatever type you prefer.
This is also great with scallops, prawns, oysters, or any type of meat.
STEP 1 - Prepare the Ingredients
Add everything to a bowl and mix thoroughly
Heat up the wok and fry the omelette
Plate and eat!!
Serve with Rice or eat alone. The choice is yours. We use a chili paste to kick the heat up a notch.
